Chat Thai has served Sydney since 1989, growing from a Darlinghurst storefront into a ten-venue group with its own certified organic farm in Byron Bay. The Circular Quay flagship, opened at Gateway Sydney, is the largest restaurant the brand has ever built, with around 145 seats, two kitchens, a noodle bar, and an outdoor dining area. Chat Thai was founded in 1989 with the aim of bringing honest, traditional Thai cooking to Sydney, and it has stayed close to that idea while growing across the city. The Gateway restaurant combines exposed brick, warm timber, and colourful artwork with open kitchens and a central counter, creating a premium yet lively setting.
